I have 3 little ones and they are SO typical about food it’s not even funny. My oldest is SUPER picky. My son will eat anything and his twin sister… well she is two years old so it really just depends on the day! And being toddlers, we’ll…they eat toddler meals… everything has to be cut up small.  Oh, and did I mention that I like to eat low carb? It’s a complicated dinner table around here. And I know we aren’t the only family living this way.

I need to make food that can be prepared in multiple ways and when I cook, I like to make ALOT and eat on it all week. Enter this easy Turkey Sausage Alfredo Bake. I make the turkey sauce on it’s own in a double batch and in two separate pans I can assemble a pasta for the kids and my husband  and a cauliflower version for myself. Plus it is yummy enough and large enough you could eat on it for a few days! In fact my oldest told me I was the “best mom ever” last time I made this. Score!

It’s the easiest thing you could make for dinner tonight!!! I hope you love it as much as we do!!

Turkey Sausage Alfredo

What you need:

1/4 Chopped Onion

2 lbs of turkey sausage (could totally use regular sausage)

2 Jars of Alfredo 

half and half (to add if the jars aren’t plentiful enough)

1 box Penne

1 package riced cauliflower steam bag

Bag of shredded Mozzarella 

Bag of Shredded Italian Blend

Turn of shaved Parmesan

2 Separate pans, sprayed or buttered so they don’t stick

Steps

1. In pot, cook and drain pasta as directed on package.
2. Cook Cauliflower Rice in Microwave per instructions
3. Meanwhile, in nonstick skillet, cook turkey and onions, season with Italian seasoning and salt and pepper (if you like)over medium-high heat 6 to 8 minutes, stirring occasionally, until turkey is no longer pink; drain.
4. Stir in Alfredo Sauce. Cook 2 to 3 minutes, stirring occasionally, until thoroughly heated. If too thick add half and half.
5. In first pan combine pasta, half of the Turkey Alfredo and stir. Sprinkle with cheese. More is More! 
6. In second pan combine Cauliflower Rice and second half of turkey Alfredo. Sprinkle with Cheese!
7. Cover with foil and bake on 350* for 30 minutes.
