I am not a fancy cook. I have said it many times, I cook because my family will starve if I don’t. 

But I do LOVE to eat! And my Mississippi family has been making this very casserole forever and I love it so much I would make it ahead myself and let my husband pop it in the oven for me to eat on the day of Mothers!!! It is THAT good.

I realize on mothers day the very last thing you want to do is make brunch for yourself. And there is something so sweet about my little girl marching in with a piece of messy buttered toast and a cup of black coffee even though I don’t drink it that way that would charm any mothers heart. However this is a YUMMY casserole. And just throwing it out there, that if your family is young like mine and can’t really do more than toast and scrambled eggs, this is a great make ahead breakfast to put in the fridge and have them slide it right on in the oven while you are still asleep ❤️  It is also simple enough your older kids could easily whip it up. And all these simple ingredients are easily found at your local grocery store.

Whatever you decide to do for mothers day, I hope it involves in sleeping in a little bit late and spending the day with the people you love the very most. I know I will!

How to Make It

Step 1

Sautee Sausage and onions with spices in 1 tablespoon of the oil in a large skillet over medium.  Cook, stirring occasionally, until fat is rendered, about 4 minutes. Using a slotted spoon, transfer sausage to a large bowl: let cool 10 minutes.

Step 2

Whisk together eggs, milk, mustard, salt, and pepper. Add egg mixture and 1 cup of the cheese to bowl with onion/sausage mixture, and stir to combine. Arrange croissants, slightly overlapping, in 2 rows in a lightly greased 11- x 7-inch baking dish. Pour mixture over croissants. Sprinkle with remaining 1⁄2 cup cheese. Cover with aluminum foil, and chill 8 hours or up to overnight.

Step 3

Preheat oven to 375°F. Uncover casserole, and place on a large rimmed baking sheet. Bake in preheated oven until golden brown and center is set, about 1 hour. Shield with foil after 25 minutes, if needed to prevent excess browning.

Step 4

Eat.
